Spinach and Celery.... Who knew!
I made two great things for dinner last night quick and easy. Portobello Mushrooms with Spinach stuffing. I roasted Portobellos in the oven at 350. I put them on a cookie sheet sprayed with Pam mushroom caps underside up. I brushed them with olive oil and 1 chopped clove of garlic. Baked 15-20 Minutes. While those where baking I cooked the spinach stove top over medium heat in olive oil. First I sauteed garlic for 3 minutes added a couple of handfuls fresh spinach, cooked until wilted. Then I filled the baked mushrooms with the spinach and added a couple of squirts of fresh lemon juice and fresh chopped tomato. It's a great recipe for vegetarians. It would also be good on a burger bun with a pesto. I served it with a Mediterranean Celery Tuna Salad recipe I found in Rachel Ray Magazine or it can be found at http://www.rachaelraymag.com/. I made it with Salmon instead. I have to admit I was sceptical at first but it was delicious.
